Pie Madness. I made 5 pies tonight. The first pie was a pumpkin pie. I failed. I think. Will try it tomorrow. Who knows. I think I put too much molasses in it, it’s VERY dark and it looks nothing like the pies my Mom makes. Sigh. I followed the directions on the Libby can precisely, then added my Mom’s signature plop of molasses. WTF? The picture on the left is before I baked it. On the right? Pan full of ick.

The other four pies? Chicken Pot Pies!

OMG. So good.
How?
Well. I sort of followed a recipe and then I meandered off.
Pie Crust (double your standard recipe)
Bag of frozen peas & carrots + one extra small can of peas
3 large chicken breasts, cooked, chopped up.
4-5 large red potatoes, cut up, boiled
3 cans of cream of chicken soup
saute one large onion
salt, pepper
You’ll have enough stuff to make about 6 medium sized pies. [NYC Peeps; Jack's 99 Cent Store has a set of 4 tins w/ tops for...99 cents]
Put the pie together, cut some vent holes and pop it in the oven for about an hour.
I used 6 inch tin foil pans which should be enough to feed two people. That said, they are so yummy you may want one to yourself!
The best part is it actually has CHICKEN in it unlike the store bought pies where you rummage around the pie looking for that elusive chunk that is perfectly square shaped and a tad scary.
EDIT:
So I rammed a spoon into the pumpkin pie, it’s totally normal under that weird dark layer & tastes fine.
Maybe the molasses just rose to the top?

Mrs. Blandings totally made me LOL.
Today I broke my sewing machine and totally f’d up my Daring Bakers challenge. So the pumpkin pie looks pretty good to me. I have to say I’ve never seen a pumpkin pie do that! Odd…even with the molasses I can’t understand. Hmmm. Marilyn will know!

Cover the pumpkin with whipped cream if you don’t like the way it looks, it is probably just the molasses. I made persimmon pudding and it turned very dark. The cookbook said the air turns persimmon dark, like cut apples if you don’t put on lemon juice, Happy Thanksgiving.

Kate – Yeah, I really think it’s just that the molasses rose up. It seemed a little too watery when I poured it into the gunk. Nothing a little whipped cream & ice cream can’t cover up! LOL

The chicken pot pies confuse me. They do not look like the chicken pot pies I grew up with, you know the type full of gravy and has only one pea and one carrot and tasted like the box it came in? Yeah, my mom couldn’t cook (still can’t) and I grew up on food made from a box. Ick. Good incentive to learn how to cook when I left her house!
